enjoy parathas from Pakistan
how to...
Visitors to this event in the How To... series learned how to make parathas from Nazia, a first generation British woman of Pakistani heritage.

Although parathas do not take long to cook, the tradition of cooking them one by one helped participants to work at a slower pace.

As we watched the parathas cook, we learned of Nazia's visits as a child to a slum in Pakistan. Though her relatives there had few possessions, they were generous. Each evening her aunty would prepare the chapatis and parathas (if they had something tasty to cook inside the chapatis). She would cook them over a fire while the children sat around her on the ground.

Nazia remembers the sense of togetherness as they shared their simple but delicious food. She remembers the feeling of slowing down to watch the food cook, of hearing the aunty's stories about the tragedy and comedy of Pakistan's slum dwellers.
